WHAT IS A COMMUNITY CAFÉ?
Imagine a Place….comfortable, peaceful, the aromatic smell of fresh spices and deliciously prepared soups, bread baked with freshly milled flours, pastries and pizza, specialty gourmet recipes using local organic ingredients! Fresh roasted coffee, the clanging of a pot or pan in the background, laughter, friends, and family…community!

Imagine feeding your family a meal, holding a business meeting over a gourmet lunch, or catching up with an old friend over a scrumptious,  yummy dessert and a cup of unbelievably flavorful coffee or tea!

Imagine a place that builds a healthy community by providing a basic need of food in a respectful and dignified manner to anyone who walks in the door! Dedicated to eliminating hunger and social barriers associated with food by feeding all people regardless of their ability to pay! 
Imagine a place where YOU can be the guest chef or you teach a workshop. Volunteer in busy kitchen or pick organic produce from local gardens!
We Will Teach...
Social Sustainability

We strongly believe in a "hand up, not a hand out" model. Not only do we provide volunteer opportunities to earn meal vouchers, we will provide training to our volunteers in the food industry as dishwashers, prep cooks and cooks. We are partnering with local organizations to provide life skills classes. Participants will learn how to grow, prepare or preserve food. In turn this will help people to stretch their food budget and eat healthy.
In collaboration with Pikes Peak Workforce Center we will provide an atmosphere where our recovery clients and Harbor House Supportive Housing residents may learn a new vocation and work with one on one job coaches to move past the barriers that have caused them to lose past jobs and place them on a true track of self –sufficiency.

Harbor House Community Cafés and Coffee Bars are not just another food venue. A community Cafe puts people in touch with their food through relationships; relationships with the growers of the food and relationships with each other in the community.
- Why operate with no set prices??
There are no set portions and therefore every meal is individual. This empowers customers and builds trust through personal responsibility.

- Why have no set menu??
No-menu promotes seasonal food which in turn is better for our bodies and the environment.

- Why choose your own portions??
This helps end food waste and offers healthy portion control.

- Why serve organic food and anti-biotic and hormone-free meat and dairy??
This promotes good health, supports small local Colorado organic farmers and helps recover the environment.

- Why serve local food??
Growing & serving local food promotes food security & sustainability and lessens our carbon footprint

- Why use volunteers??
This allows food security and inclusion among all members of the community. This is a hand up rather than a hand out. And it helps to remain sustainable.

- Why pay employees a living wage?? This is fair empowers individuals through respectable wages and contributes to sustainability within the community.

Our concept is about growing and serving organic local food, being sustainable, sharing good vibrations, building community, reducing waste and providing our customers with delicious, vibrant cuisine by means of an exceptional dining experience where people from all parts of our community "break bread" together.
Our Community Café will be an organic community kitchen serving food made with creativity and love, enjoyed at a community table. This is part of what will make it a place our customers will  want to share and return to again and again.

Who We Are:
This is one of the bedrocks upon which the concept is built and is crucial to our goal of minimizing waste. By having people be mindful by choosing and paying for the amount of food they eat, almost guarantees lower food waste. We also don't encourage people to overeat or to waste food, which often happens in other restaurants that serve gigantic portions for their customers.
Suggested donations (prices) are given to customers when requested. When people are given the freedom to be responsible for their actions however, abuse of that freedom will occasionally occur. A policy using creative and compassionate methods for dealing with abusers of the "no prices" concept will be necessary.
Small batch cooking allows for varied and creative options. It lets us eat with the seasons and supports local farmers. It lets us buy produce in season at a reasonable cost and we don't have to participate in driving a "false market" for out of season produce. It lets our customers share their inspired cooking and family ideas with us. Patrons come more often and appreciate the variety.

There are traditionally two complimentary staples. These are low cost, tasty and high nutrition.
These are a "gift" of the restaurant and available to everyone. Patrons can eat these dishes solely with no questions asked, or use them as the main course for a low priced meal if they are short of cash. Some donate afterwards, some don't. But either way, everyone in the community eats organic wholesome food.

All patrons have the opportunity to volunteer in exchange for a meal. The nature of the volunteer work will depend on your needs and the health department.

- We believe that we can trust our customers to be inspired, honest and fair in their exchange of money
  and/or time for the fresh, local, organic food we prepare both mindfully and in a heartfelt way each day.

By providing meals without shame, reducing food waste through the encouragement of personal responsibility, enhancing relationships with local farmers, and creating an atmosphere where people from all socio-economic classes can eat fresh, local food in-community, attitudes can change. And change in attitudes is on the cutting edge of change everywhere else.

We estimate that after initial acquisition and set-up costs are covered through fundraising, operational costs of the café (staffing, food, upkeep, etc) will be covered on a profitable basis. 
The total cost for full implementation: Productivity is dependent on many variables but rest mostly on the property that is ultimately chosen for the café.   Current estimates range from as little as $60,000 for occupying existing, empty café space to as much as $800,000 for the purchase of a historic home currently equipped with a state of the art commercial kitchen and enough rooms to house 26 women in recovery with children.

It is unconventional because food is prepared in small batches with the seasons and served to patrons who choose their own portions of soups, salads, pizza and desserts. We will also offer vegetarian, vegan and gluten free cuisine.  Patrons are expected to pay a fair and respectable price for the food that they have eaten based on their personal circumstances. Suggested prices are available to create a comfortable atmosphere. We find the privilege of choosing portion size and prices leads to little or no food waste and includes all members of our community.

The Community Café attracts an economically diverse clientele, which makes it sustainable and builds a stronger, more broad based community. There will be volunteer positions available daily for those who want to earn meal vouchers or just contribute their time.

Environmental Sustainability

We will use local organic produce from many local farmers. We grow a small amount of produce in our own garden using compost from kitchen scraps. We will be partnering with Pikes Peak Urban Gardens and Care and Share Food Bank  as well local and regional organic farms.

Economic Responsibility

We believe in being sustainable and as an economic contributor in our community at large as well as a charitable venue.

We believe everyone should have access to healthy & organic food.
The intent of Harbor House Community Café will speak through its food and the employees and volunteers that are making a difference in themselves. Our customers , looking for good food, feel the intent and help create the synergy. The synergy, in turn, becomes something other people will want to recreate in their own neighborhoods.

Our Social Enterprise is a nonprofit Organic Community Café and Coffee Bar with a purpose, where you customize your meal by choosing your own portions of creatively crafted food and then you price your own plate based on what is fair and respectable for what you've eaten. Patrons will have the opportunity to pay a little extra to help with volunteer meals and the complimentary dishes.
